Halfway between the capital city of Kigali, and the protected mountain gorilla habitat of Volcanoes National Park, the village of Musasa and the Dukunde Kawa cooperative are producing one of the most balanced and flavorful coffees of central Africa.
Rwanda, known as the “Land of a Thousand Hills” is becoming one of the premier specialty coffee producing countries, due to its climate, attention to detail with growing and processing, and those Hills.
The cooperative consists of almost 2000 farmers, 80% of whom are women, who grow beans, potatoes, plantains, as well as their excellent coffee.
The 3 washing stations (the largest of which is in the village of Musasa) carefully sort cherries by hand, depulped, and then allowed to ferment up to 18 hours. The pulp is removed through a series of washing channels, when the beans are then dried on elevated racks, protected from the hottest part of the day, and monitored to a moisture content of 14%.
