Gilda Carrascal, Mateo Patino, and Andy Davila own and operate their 7 hectare farm at 1600-1700 masl in Las Tolas de Pichincha. They grow Tekisik Bourbon and Pacamara varietals. These folks have been farming for 8 years and found something special though Las Tolas.
This producing region is located north of Quito in the department of Pichincha, and Las Tolas is in a small valley just off of Highway 1. For the indigenous Yumbos, who based their year on a lunar calendar, Las Tolas proved to be the only valley with enough of a break in the clouds to provide a clear view of the moon. It is a sacred area with ruins still scattered across its forests.
Processing is very clean and simple here - manual depulping, fermentation in plastic buckets, washing in clean buckets and drying on raised beds. The 1600 Estate is an excellent example of the clean, sweet profile unique to coffees from Ecuador and we are very excited to share it.
