Enzyme fermentation. Flowers in the cup.
THE SUPERTHING FIELD GUIDE
Blood orange, lemongrass and florals. Here's a look at the work behind Rocket Flower's bright, fragrant cup.

The first thing to know is what we taste.
Our notes for Rocket Flower are blood orange, lemongrass and florals. A bright, fragrant invitation to explore another side of coffee.
“I've never really had a coffee like it before.”
Kyle, Superthing roaster
Blood orange, lemongrass and florals are tasting comparisons: familiar things that help us talk about a cup of coffee.
Coffee starts inside a fruit.
The beans we roast are the seeds of coffee cherries. During processing, microorganisms act on sugars in the fruit material around those seeds. This fermentation is one of the things that can affect the coffee's eventual character.
All of this happens before the coffee reaches our roastery.
Small helpers. Specific jobs.
Enzymes speed up specific chemical reactions. In Rocket Flower's process, enzymes are added during fermentation with the aim of encouraging a floral profile.
For the producer, it's another tool for working with the coffee's character.
Huver's work. Our good fortune.
Rocket Flower comes from Huver Castillo's El Paseo farm in Nariño, Colombia. The variety is Caturra.
The process description for this coffee includes fermentation in the cherry, pulping, a tank fermentation with added enzymes, then drying and stabilization. Superthing lists the process as enzyme-fermented anaerobic washed.
That's the useful first-pass version. The producer's work gives us a coffee with a lot to say; our part comes at the roastery.

- Fermentation + enzymes

All roads lead back to the cup.
The process is part of the story. Blood orange, lemongrass and florals are what we notice when we brew it. That's where the exploration gets delicious.
Use your brewer. Bring your curiosity.
We recommend Rocket Flower across brew methods, especially manual brewing. Brew it separately from Tractor Beam. Start with a method you know and pay attention to what you enjoy.
No need to turn breakfast into a science fair.
Floral detour. Caramel companion.
